My Feedback:

The nose on Snow Capped’s single varietal is fruity, a little bready, and on the heavy side. This is a lovely rich cider with personality that is oozing with charm. The draw is smooth, but with enough sharpness to enliven the tongue. It then flows into the incredible middle passage that is a journey full of depth, warmth and light. It is fruity and a touch sweet, but really well balanced. The body is medium-to-full, but not too heavy in the slightest. It is light, yet has some tannic richness. The sweetness is followed by a subtle tartness. You will want to suck your tongue to get every last flavor out of your mouth. Then the bittersweet finish just lingers forever, like a good memory you don’t want to fade. This is an ideal semi-dry crowd pleaser that I could drink all night. Fruit forward with just enough sweetness, but also enough complexity that it is not your standard single-note kind of American cider. It reminds me of a good Pays d’ Augue bouché. Well done!

Product Description:

This revered bittersweet apple was first discovered in Somerset England during the 1800’s. Our high elevation orchards increase UV exposure creating intense flavor profiles. We combine this with a slow fermentation. Our Dabinett single varietal is processed unfiltered. Further maturation is developed in the bottle evoking a deep golden hue and beckoning butterscotch aroma. This complex flavor development leads to fruity sweetness, and rich buttery floral notes. Hinting woody vanilla then building tingling warmth and tannins on the tongue for a slightly dry bittersweet finish. 100% Dabinett apples grown in our Colorado Orchards. Serve slightly chilled.
