Stem Ciders

This largely still pale amber cider from Stem has a pretty heavy aroma where raisins are front and center. Interesting. For such a heavy looking cider with a deep nose, it actually had a bit of a watery mouthfeel on my first take. The texture is a bit unique. It feels a touch woody, like it’s been sitting in whiskey barrels. There is a flat tone and an alcohol flavor that fill the palate from the second phase to the finish. It does leave you with a satisfying finish like harder spirits. A lot is happening in your mouth, but it is all very subtle, mildly tannic and just a skosh bitter. This is definitely best drunk slow and savored. It is quite astringent and only has whispers of sweet apples. Though the raisins were present in the nose, they are absent to my tongue. You gotta like it potent to enjoy this one. Those that like cider for cold refreshment, stay away. But if you like a refined serious drink, this is really good.
