Farmstead Cider

Farmstead’s Teton Pét-Nat is a slightly cloudy straw color with sprightly bubbles and a light crisp nose that is very lightly acidic with hints of lemony sweetness. The other Farmstead ciders I’ve tried are all deep, rich, and potent farmhouse ciders, but this is like a crisp fall breeze blowing through an open window. It is still pretty dry, but with a lighter body that is crisp with a moderate acidic sharpness throughout the first two phases. But by no means is it overpowering. It is also definitely more tart than sweet, and the flavor drops out for a quiet and subtle finish. While it may not have the rich complexity of other farmhouse ciders, I’d probably be in the mood for one of these more often. And certainly, if you’re in Wyoming—or buy cider online—and a crisper, lighter, cider is more to your liking, this is very good cider indeed!
A single varietal, sparkling cider made with naturally grown Stark apples from the ancient trees at White's Orchard Farm in Frankfort, ME. Juice pressed from the fruit of a 100+ year old trees. Stark is an heirloom from the 1860s. We had so much of it, we thought we'd try it as a single varietal cider. We're glad we took the risk. Low acidity, pétillant naturel, soft bubbles, and a touch of residual sweetness but not enough to call it semi-dry.
