My Feedback:

Stem’s Winesap single varietal smells golden, sweet, bright, and lovely with a rich apply aroma. Oohw, you can see why early Americans liked this apple for all their needs—including cider. While the nose was bright and sweet, the finish is quite dry. It remains approachable, however, as you could serve this to just about anybody. It is not very bubbly and has a lighter body which shows off the subtleties of the drink. It is not very acidic and has drying characteristics that turn the respectable tartness in the second phase into a fine, almost bitter, finish that is mildly tannic. It has just enough sweetness to liven the tongue and awaken it to those beautiful, subtle, complex and astringent notes in the finish. It you like it dry and light but with fruity characteristics that aren’t overpowering and mildly sophisticated this is outstanding.
